Heating animal fat reduces the viscosity of the oll and reduces its surface tension, which is the result of the movement of hot molecules and the weakening of intermolecular cohesion. Weakened cohesion makes lipids easy to precipitate from cells, and allows lipid droplets from individual cells to converge into large clumps, while fats are separated from proteins due to diferent specific gravity. |
